El ballotin de cerdo frito y hoja de kaffir es muy crujiente, fragante, muy ligeramente especiado. Con una batidora, sólo tardará unos minutos en hacer el relleno. El plegado es muy sencillo y el efecto es genial. Con la salsa dulce y picante, estos ballotins son auténticas maravillas. Una visita obligada.
Receta para 4-5 personas:
-un paquete de hojas de «Wonton» (de las tiendas Tang o asiáticas)
-330g de lomo de cerdo deshuesado, picado
un tercio de manojo de cilantro (sólo las hojas)
-2 cebollas chinas
-1 cucharada de pasta de curry rojo
-una clara de huevo
-una cucharadita de harina de maíz
-unas diez hojas de kaffir, sin el nervio central
Este es el aspecto de una «hoja de kaffir», también llamada «hoja de limón» o «hoja de combava». Suele venderse congelado en las tiendas de comestibles asiáticas.
Poner todos los ingredientes en una batidora y ….. ¡apretar el botón! ¡Muy difícil!
¡El relleno está listo en segundos!
Tome una hoja de wonton y rellénela con el equivalente a una cucharadita de relleno de cerdo.
Dobla la caja de tal manera que obtengas algo bonito (¡gracias Leandro por este bonito plegado!). Dobla los bordes y presiona la caja para cerrarla.
Calienta un poco de aceite y sumerge los paquetes en él. Cuando estén dorados, ¡están listos!
Para disfrutar muy caliente. Después de la cocción, atar el ballotín con un tallo de cebolla china, atado y cortado. Se pueden servir con una salsa dulce, picante y ligeramente viscosa que se vende como salsa para rollitos en los supermercados.
