Después de una clase de cocina, me sobró lomo molido y tenía que preparar una cena. A menudo hago este tipo de arroz frito, sin necesariamente tomarme el tiempo de publicar una receta. El arroz frito no significa que el arroz se haya frito, sino simplemente que se ha frito con muchas cosas buenas en un wok. Siempre puedes adaptar todo a tu gusto. He aquí una receta sencilla con ingredientes fáciles de encontrar, que hice después de un taller. La albahaca tailandesa que pongo al final es opcional. Sólo tendrás que cocer el arroz el día anterior para poder separar los granos en el wok. Me inspiré libremente en los numerosos platos de arroz frito que he probado a lo largo de mis viajes por Tailandia. ¡Un resultado muy aromático!
Receta para 4 personas:
300g de arroz tailandés
400 ml de agua
3 huevos
1/2 cebolla blanca
1 pimiento rojo
1 pájaro rojo pequeño, sin semillas
3 cm de jengibre fresco rallado
2 dientes de ajo, finamente picados
150 g de guisantes
300 g de lomo picado
1 cucharada de azúcar
1 cucharada de nuoc mam
8 cebollinos chinos
un pequeño manojo de albahaca tailandesa
aceite de colza para cocinar
sal, pimienta negra
Empiece el día anterior para dejar que el arroz se enfríe durante la noche en la nevera, lo que permitirá que se afloje después. Lavar los 300g de arroz crudo en un pequeño colador con agua limpia durante un minuto.
Escurrirlo y ponerlo en una arrocera o cacerola con los 400g de agua.
Cierra la tapa y cocina durante 15 minutos o utiliza el modo automático de la arrocera.
A continuación, dejar enfriar el arroz cocido y verterlo en un recipiente. Colocar en film transparente y enfriar durante la noche.
Al día siguiente: vierta 3-4 cucharadas de aceite en un wok. Calentar a fuego alto y romper los huevos en él.
Mezclar groseramente y no volver a tocar. Dejar que la tortilla se cocine por un lado antes de darle la vuelta.
Verter en una tabla de cortar y cortar en trozos. Déjalo fuera.
Pelar y picar finamente la media cebolla. Retira las semillas del pimiento y córtalo en trozos pequeños.
Retirar las semillas de la guindilla y cortarla en trozos pequeños. Sin las semillas, será mucho más débil y la quemadura no durará tanto.
Poner la cebolla, el pimiento, el ajo picado y el jengibre rallado en el wok (sin lavar de la tortilla) con 4-5 cucharadas de aceite.
Añadir los guisantes (congelados aquí).
Mezclar bien y cocinar durante 5 minutos, removiendo con una cuchara.
Añade el lomo de cerdo picado (por supuesto, puedes sustituirlo por otra carne).
Mezclar bien, añadir el azúcar y el nuoc mam, sal y pimienta al gusto. Deja que la carne se cocine perfectamente.
Cuando la carne esté bien cocida y no quede casi nada de jugo en el fondo, añadir el arroz frío.
Mezclar bien para separar todos los granos. Esto puede llevar 2-3 minutos. Por último, añadir la tortilla en trozos.
Picar finamente la cebolleta (yo no pongo la parte blanca, o se puede anticipar poniéndola con la cebolla blanca al principio de la receta).
Picar la albahaca tailandesa. Si no tienes, ¡la receta ya está muy buena sin ella!
