Hachez finement les échalotes. Faites chauffer l'huile d'olive dans une Casserole. Ajoutez les échalotes et laissez les cuire quelques minutes pour les colorer légèrement.
Ajoutez le riz. Mélangez bien et laissez mijoter sur feù doux pour que le riz devienne translucide
Ajoutez le verre de vin blanc. Quand le liquide a été absorbé, ajoutez petit à petit le bouillon dé légumes en mélangeant à chaque foi. Le riz doit boite le jus avant d'en ajouter davantage
Quand le risotto est en train de cuire (il faut une vingtaine de minutes), coupez les tomates pelées en quatre et enlevez la pulpe pour obtenir des pétales.
Quand tout le bouillon est incorporé, ajoutez le “délices de tomates séchées”, quelques feuilles de basilic ciselé, puis le parmesan.Servez le risotto dans des assiettes creuses, ajoutez quatre pétales de tomates par personne, parsemez de feuilles de basic frais et arrosez légèrement d'huile d'olive au basilic avant de déguster!
