Il a beau ne pas faire un froid glacial en ce moment, comme c’est l’hiver je me prépare tout de même des soupes le soir. Cela ne prend que 10 minutes à préparer, cela cuit tout seul et on fait le plein de légumes à moindre coût ! Des soupes oui, mais je veux que cela ait du goût… Et puis un peu de beurre et de crème n’a jamais fait beaucoup de mal… non? Alors aujourd’hui je vous propose mon velouté de carottes aux épices douces qui mettra du soleil dans votre bol et rendra toute la famille aimable…!
Pour les 200g de patate douce, cela correspond en gros à 1/2 patate. Mais vous pouvez la mettre entière si vous voulez. Il faudra ajouter dans ce cas 150ml d’eau en plus par la suite.
Épluchez et coupez la demi patate douce.
Placez l’oignon coupé en 4, les carottes, la patate, du sel, du poivre et le bouillon dans la cocotte.
Vissez à fond et portez à ébullition. Quand la soupape se met à siffler, baissez le feu puis laissez cuire 15 à 20 minutes. Sans cocotte, la cuisson sera plus longue. Il faudra simplement vérifier que les carottes sont cuites.
Enlevez la soupape et laissez la vapeur s’échapper. Je ne sais pas pour vous, mais j’adore ce bruit et l’odeur que cela dégage…!
Les légumes sont cuits comme il faut !
Passez le mixeur plongeant dans la soupe.
Ajoutez la crème et le beurre.
Puis enfin les épices.
Mixez de nouveau assez longuement pour réduire en poudre le cumin. Je le préfère en grain pour que sa saveur soit préservée.
Vérifiez la texture du velouté et son assaisonnement. Ajoutez au besoin un peu d’eau.
Épluchez et coupez la carotte en tranches de 1mm d’épaisseur.
Coupez les tranches en bâtonnets puis en cubes.
Faites bouillir une petite casserole d’eau salée puis ajoutez les cubes de carottes.
Faites-les cuire 2mn30 puis égouttez-les. Rincez à l’eau froide pour stopper la cuisson.
Il ne vous reste plus qu’à servir le velouté très chaud avec les cubes de carottes et un peu d’épices…!
