Après être allé à Barcelone, j’ai dévoré du regard tous les « turrones » dans les magasins. Il y en a tellement de sortes différentes ! Il suffit de voir les quelques photos que j’ai postées sur le voyage culinaire LÀ ! Je vous avais déjà proposé ma version du turron d’Alicante (recette ICI) il y a quelque temps sur mon blog de cuisine. Aujourd’hui c’est une version bien plus simple, qui se prépare en 15 minutes top chrono pour un résultat sensationnel ! C’est très difficile de résister devant ces amandes torréfiées à point enrobées de juste ce qu’il faut de sucre ! Cela tient parfaitement et se brise très naturellement en bouchées merveilleusement croquantes !
Placez le cadre rectangulaire de 9X23cm (ou un autre format de superficie équivalente) sur une feuille de pain azyme, côté strié vers le bas. N’oubliez pas de graisser l’intérieur du cadre pour permettre le démoulage du turron ! Pour la superficie du cadre, le mien fait 207 cm carrés (9×23). Si vous avez un cadre carré de 14 ou 15 cm de côté, cela fera parfaitement l’affaire. Sinon, multipliez les côtés de votre cadre pour connaitre sa superficie et faites une règle de trois pour avoir un coefficient multiplicateur. Explication: si vous avez par exemple un cadre de 20X20, cela fera 400cm carrés de superficie, le mien 207 (on peut arrondir à 200), donc en gros il faudra multiplier par deux les ingrédients. C’est clair pour tout le monde? ? Si vous un cadre de 5X10, il faudra en revanche diviser par 4 ! Voici les belles amandes que j’ai achetées dans un marché de Barcelone.
Versez le sucre et le sirop de glucose dans une casserole.
Ajoutez un peu d’eau pour imbiber le sucre. Faites bien attention à ne pas avoir du sucre sur les parois de la casserole.
Mettez les amandes sur une plaque garnie de papier sulfurisé puis enfournez dans un four préchauffé à 180°C pendant une douzaine de minutes.
À mi cuisson, mélangez-les pour qu’elles soient ensuite toutes dorées de façon homogène.
Portez à ébullition le sirop.
Grâce au sirop de glucose, il n’y a aucune risque que le sucre ne masse (cristallise).
Vous devez obtenir un caramel assez coloré (mais pas brûlé !).
Versez alors les amandes grillées et encore chaudes.
Mélangez rapidement car le caramel va durcir assez vite !
Versez le tout dans le cadre.
Puis répartissez-les uniformément avec le dos d’une cuillère.
C’est quand même toujours beau des amandes et du caramel !
Coupez le pain azyme autour du cadre.
Quand le caramel a durci, décadrez le turron.
Conservez-le impérativement dans une boite parfaitement hermétique !
