Voici ma dernière réalisation pour Traou mad! Voilà quelques temps, Traou Mad avait beaucoup aimé mon petit reportage que j’avais réalisé sur leur usine à Pont Aven (voir le reportage ICI). Ils m’ont depuis demandé de réaliser quelques recettes pour leur blog: http://blog.traoumad.fr/. J’ai donc eu le plaisir de recevoir à la maison, un colis rempli de merveilles! Cette fois je vous ai concocté une recette avec les trois gâteaux sucrés emblématiques de Traou Mad, puis j’ai ajouté une base de chocolat, de praliné croustillant et…de confiture de framboises! Une merveille pure beurre qui est en osmose parfaite avec les galettes de Pont Aven, les Traou Mad et les crêpes dentelles. Dixit l’une de mes goûteuses attitrées: un des meilleurs desserts qu’elle ait mangé!
Mixer les traou mad avec le beurre fondu. Répartir la pâte en poudre dans 4 cercles à entremets de 8cm.
Mettre au four à 170°C pendant 10 minutes. Sortir puis ajouter une cuillerée à café de confiture de framboises dans chaque cercle. Remettre au four pendant 10 minutes, la confiture va cuire légèrement. Sortir et laisser refroidir.
Préparer le praliné. Fondre le chocolat et le beurre. Ajouter le praliné et les crêpes dentelles écrasées.
Bien mélanger, le praliné est prêt!
Répartir le praliné dans les 4 cercles (il n’y en a que trois sur la photo!).
Ajouter une galette de Pont Aven sur le praliné.
Ajouter une cuillerée à café de confiture de framboises sur chaque galette.
Préparer la ganache au chocolat au lait: Mettre la crème à bouillir sur feu doux et verser sur le chocolat au lait en morceaux (ici des pastilles Barry!).Bien mélanger et c’est tout!
Verser la ganache liquide dans les quatre cercles.
Le gâteau est presque terminé.
Poser délicatement une galette sur la ganache. Si l’on souhaite préparer ces petites douceurs la veille de les servir, il vaudra mieux poser la dernière galette avant de les servir pour éviter de les avoir molles!
Laisser refroidir au moins 3 heures avant de démouler avec un sèche cheveux (en le passant autour pour chauffer le cercle) et de déguster frénétiquement!
