« Tac-tac ». C’est le bruit du petit instrument que l’on utilise pour marquer les gâteaux et qui du coup donne ce nom à ces merveilles imprégnées de miel, au sésame et aux raisins secs. Je reviens du Maroc, où j’ai de nouveau cuisiné avec mes amies Touria et Lalla Myriam. Toujours aussi généreuses, nous avons fait ensemble les « tac-tac » en moins de temps qu’il ne faut pour le dire. Une recette addictive. Il faudra beaucoup de volonté pour ne pas manger la boite !
Coupez les raisins secs au couteau en petits morceaux.
Mélangez les œufs, le sucre glace, l’huile et le beurre fondu jusqu’à avoir une crème.
Ajoutez les graines de sésame et les raisins hachés.
Ajoutez une partie de la farine avec le sachet de levure.
Commencez à mélanger au fouet.
Puis ajoutez de plus en plus de farine. Il faudra alors mélanger à la main.
Normalement à la fin de l’ajout de farine, la pâte doit pouvoir se former en boulettes.
Faites des petites boules de 18g (c’est le bon format pour absorber la quantité idéale de miel dans les étapes suivantes). La pâte est grasse au toucher, mais c’est normal. Après la cuisson, cela disparait.
Placez les boulettes de pâte sur une plaque (ou des plaques plus probablement !!) garnie de papier sulfurisé en les espaçant un peu.
Vous pouvez utiliser un petit motif pour dessiner la pâte en surface. Tout peut faire l’affaire. Ici, j’ai trouvé des poussoirs qui permettent de faire de jolis motifs très simples. Sinon, il suffira d’écraser un peu la pâte avec la paume de la main.
Appuyer sur la pâte pour incruster le motif.
Enfournez au four préchauffé à 180°C pendant une vingtaine de minutes. Les « tac-tac » doivent être bien cuits. Ils n’en seront que plus croustillants !!
À la sortie du four, plongez les « tac-tac » dans une casserole de miel à la fleur d’oranger. Il suffit de mettre du miel et deux ou trois cuillerées à soupe d’eau de fleur d’oranger dans une casserole et de porter à frémissement.
Laissez les gâteaux dans le miel chaud pendant une dizaine de minutes avant de les égoutter et de les ranger dans une boite.
