Pour ce gâteau, deux écoles s’affrontent. La cuisson à la vapeur, ou au four classique. J’ai choisi la deuxième option, car cela est beaucoup plus simple à faire chez soi. Je fais cependant cuire à 160°C et j’ajoute de la vapeur sur les dernières vingt minutes. Comme pour le quatre-quarts ultime (recette ICI). Ce gâteau est totalement déraisonnable, mais que c’est bon !! Il s’agit d’un dessert très tendre et moelleux à base de dattes. J’ai fait plusieurs tests pour ajuster les proportions. Il est évidemment très riche: du beurre demi-sel pour faire ressortir le côté caramélisé et de la vergeoise brune. Dégustez-le encore tiède, il n’en sera que meilleur. Surtout avec plein de sauce qui excite les papilles !

Instructions
Dénoyautez les 470g de dattes et coupez-les en morceaux. Je mets 470 car je veux 500g cuites et elles vont prendre un peu d’eau.
Faites-les bouillir dans une grande quantité d’eau. Elle doivent devenir tendres. La durée de cuisson va donc dépendre grandement de l’état initial des dattes.
Je compte environ 10 minutes (sauf si vous avez des medjoul très tendres).
Égouttez-les bien et placez-les dans un récipient. Je pèse de nouveau pour avoir 500g de dattes cuites. Gardez le reste
Écrasez-les en purée grossière (il faut des morceaux !).
Dans un grand bol, mélangez la vergeoise, la vanille, les œufs et le beurre demi-sel fondu.
Mélangez bien.
Ajoutez la purée de dattes.
Ajoutez la farine et la levure chimique en une fois.
Un dernier coup de fouet et c’est bon !
Chemisez votre moule dans un sens et dans l’autre.
Versez la pâte et faites cuire 50 minutes à 160°C, puis 20 minutes à 150°C avec vapeur si vous avez un four combiné, ou avec une casserole d’eau bouillante dans le bas du four.
Laissez refroidir dans le moule et démoulez-le (facile avec le papier !).
Pour la sauce, mélangez la crème, la vergeoise brune et le sel dans une casserole.
Si vous en trouvez, versez la cuillerée de mélasse.
Portez à ébullition tout en mélangeant. Faites bouillir 5 minutes sur feu moyen.
Vous pouvez soit verser tout de suite (ce sera plus fluide) ou alors attendre une bonne heure avant de napper le gâteau (la sauce sera plus crémeuse).
Dégustez une bonne part en remettant la sauce par dessus. À dévorer tiède ! Vous pourrez même le réchauffer quelques secondes au four ) micro-ondes pour un moelleux encore plus alléchant !
