Comme une petite envie de fraîcheur? Alors cette entrée sera parfaite pour vous. Une soupe bien froide aux petits pois et à la menthe. Très simple, il faudra cependant bien sûr la préparer à l’avance, la veille pour le lendemain ou même le matin pour le soir, afin de la mixer à la dernière minute avec la menthe pour que celle-ci ne cuise pas et laisse place à son goût fabuleux. Une entrée saine et délicieuse à faire et refaire !
Pour cette soupe froide, cherchez de beaux légumes frais, surtout pour les petits pois et la menthe !
Mettez l’huile d’olive dans une casserole sur feu moyen, avec l’oignon coupé en morceaux et la courgette. Laissez mijoter 5 minutes.
De bons petits pois frais !!
Mettez-les dans la casserole.
Mélangez, salez, poivrez.
Versez l’eau froide.
Faites bouillir 12 minutes. Les légumes ne seront pas forcément cuits complètement, mais ils poursuivront leur cuisson dans l’eau chaude le temps du refroidissement. Laissez totalement refroidir à température ambiante puis au frais avant de poursuivre. Vous pouvez la faire la veille pour le matin pour le soir.
Quand la soupe est bien froide, mixez-la avec un mixeur plongeant.
Ajoutez les feuilles de menthe des 4 branches. Bien sûr, vous pouvez en ajouter plus à votre goût !
C’est prêt ! Goûtez et rectifiez l’assaisonnement et la teneur en menthe.
Servez-la bien fraiche et dégustez-la sous le soleil…
