Les sopaipillas sont très connus en Amérique du Sud. Mais au Chili encore plus particulièrement où ils sont réalisés à base de potiron. Ce sont de petits beignets confectionnés avec ce légume et ils se consomment sucrés ou alors avec une salade de tomates et oignons très commune en Amérique Latine. Très simples à réaliser, les sopaipillas vont apporter couleur et originalité à vos apéritifs, ou alors si vous voulez faire comme les chiliens, à vos petits-déjeuners, et pendant toute la journée! Je vous propose ici la version salée, avec la recette de la salade aux tomates, oignons et coriandre.
Commencer par préparer la salade d’accompagnement, dans le cas où l’on choisit de manger les sopaipillas en « version salée ».
Couper les tomates en petits dés.
Couper les oignons de la même façon. Hacher le bouquet de coriandre.
Mettre le tout dans un récipient. Ajouter le vinaigre et l’huile.
Saler, puis ajouter du piment haché ou du tabasco.
Mettre de côté la salade au frais.
Préparer le potiron.
Enlever la peau puis couper le potiron en morceaux. Peser le potiron sans la peau!
Mettre au four à 190°C pendant une bonne heure, le temps de bien cuire le potiron.
Il doit ressortir plus sec. Si il caramélise, c’est encore mieux!!
Mettre le potiron cuit au mixeur et le réduire en purée.
Mettre la purée dans un récipient. Ajouter l’huile.
Ajouter le sel, le sucre et la levure chimique.
Mélanger puis ajouter la farine. Il faut l’ajouter progressivement jusqu’à ce que la pâte ne colle presque plus aux doigts.
Seule la qualité du potiron déterminera la quantité de farine à employer.
Laisser reposer la pâte au frais une petite heure dans un film plastique.
Sortir la pâte au bout de ce laps de temps, puis l’étaler au rouleau sur un plan de travail fariné.
Découper des formes. Les sopaipillas sont en général ronds et parfois cannelés. C’est pour cette raison que j’utilise un moule à canelés comme emporte-pièce.
Faire un trou avec la lame d’un couteau au milieu pour coller à la tradition! Sinon, on peut oublier cette étape!
Préparer une casserole remplie d’huile prête pour une friture. Frire les sopaipillas. Ils sont cuits quand ils remontent à la surface!
Les sortir de la friture et les laisser refroidir légèrement sur un papier absorbant. Déguster tels quels ou avec la salade de tomates et oignons!
