Voici une recette parfaite pour patienter avant les fêtes et se mettre aux fourneaux et installer un peu l’ambiance et la magie de Noël… Surtout quand il fait froid dehors: la cuisine va sentir les amandes et la cannelle. Une recette vraiment toute simple pour des sablés bien croustillants. C’est le moment d’initier les enfants à la cuisine !
Mettez le beurre froid coupé en morceaux, le sucre, le sel, la farine et la cannelle en poudre dans la cuve d’un robot ou dans un grand bol.
Ajoutez le zeste d’un demi citron.
Mélangez avec la feuille jusqu’à obtenir une sorte de sable. On ne doit plus distinguer le beurre.
Placez les amandes dans un mixeur pour les réduire en poudre.
Ajoutez la poudre d’amandes. L’avantage de la faire soi même? Elle sera moins fine et on aura de plus gros morceaux d’amandes !
Ajoutez l’œuf.
Puis mélangez jusqu’à ce que la pâte soit homogène et se détache du bord de la cuve. Mais pas plus !! Sinon la pâte sera due alors que là, les sablés seront bien croustillants à souhait !
Mettez la pâte aplatie (pas en boule) dans un film étirable (je n’en avais plus pour la photo !) pendant une heure au frais.
Étalez la pâte sur 6mm d’épaisseur sur du papier sulfurisé, ce qui évitera d’ajouter trop de farine.
Amusez vous ! C’est le moment de sortir vos emporte-pièces !
Une fois les sablés posés sur une plaque garnie de papier sulfurisé, laissez-les reposer 30 minutes au frais. Pendant ce temps, préchauffez votre four à 180°C. Puis badigeonnez-les d’œuf battu au pinceau pour qu’ils dorent bien au four.
Enfournez pour une vingtaine (entre 15 et 20) de minutes en surveillant bien.
