Si vous allez un jour à Portsall, dans le Finistère nord il y a peu de chance que vous trouviez ces petits sablés. Alors pourquoi ce nom? Tout simplement car j’ai mis la recette au point dans ce village breton! Je vous propose donc aujourd’hui cette recette de biscuits. Je voulais réunir en un biscuit, tout ce qui fait la substance des crêpes et galettes bretonnes: du blé noir, de la farine blanche, des oeufs, du sucre, du beurre salé et du lait. Le résultat est surprenant, car nous sommes rarement habitués à trouver des biscuits sucrés à la farine de sarrasin, mais je trouve ces sablés totalement addictifs! Et c’est l’occasion de goûter la saveur inimitable de cette plante qui ne fait pas partie des graminées. Ces sablés seront meilleurs après 2 ou 3 jours en boîte hermétique!!
Mettre dans un bol, la farine blanche, la levure chimique et la farine de blé noir.
Dans un autre récipient (ou dans le bol d’un robot), mettre le beurre demi-sel, l’oeuf, la poudre de lait et le sucre.
Commencer à bien mélanger pour obtenir une crème.
Ajouter le mélange de farine d’une coup.
Mélanger juste assez pour homogénéiser la pâte sans trop travailler.
Pour cette étape, nul besoin de se servir d’un piston à pâte, mais je veux simplement montrer une nouvelle technique pour obtenir des sablés tous identiques. Cela peut servir pour n’importe quelle recette de petits gâteaux. Je place la pâte dans un pistolet, puis je mets le pistolet au frais pendant au moins 1h30.
Préchauffer le four à 180°C.Sans le piston, il suffira alors d’étaler la pâte et de couper avec un emporte-pièces.
Effectuer deux pressions pour un sablé.
On a alors assez d’épaisseur.
Puis couper avec un couteau le morceau de pâte qui dépasse.
Placer les sablés sur une plaque à pâtisserie garnie de papier sulfurisé. On peut si on le souhaite, imprimer un motif sur le dessus. Ces biscuits seront tout aussi bon avec ou sans!
Ce motif fleuri chinois (à l’origine, un moule à gâteau de lune) rentre tout à fait dans l’esprit breton!
Mettre les biscuits à cuire 10-15 minutes à 180°C. Laisser refroidir sur une grille puis conserver en boite hermétique type lock&lock. Ces sablés seront meilleurs après 2 ou 3 jours en boîte hermétique!!
