Le « pudim de leite » (ça se prononce « poudjim dji léïtche ») est une spécialité que l’on sert partout au Brésil en dessert. Cela ressemble à s’y méprendre à une crème renversée au caramel, mais la préparation est plus que simple, et le résultat est étonnant. La consistance du pudim de leite est ferme et onctueuse à la fois. Cette recette est à base de lait concentré sucré, cela joue beaucoup sur le goût et la texture finale. On sent un arrière goût de confiture de lait. Une cuillerée de cette merveille, et c’est le coup de foudre assuré!
Préchauffer le four à 180°C.Mettre le sucre dans une casserole avec un peu d’eau (30g) et porter à ébullition.
Le sucre doit caraméliser et avoir une belle couleur ambrée.
Quand le caramel est prêt, le verser dans un moule (avec un trou au milieu, ce sera le top de la tradition!).
Préparer la crème: verser les deux boites de lait concentré sucré dans un blender.
Remplir les deux boites vides avec du lait demi-écrémé et verser dans le blender. on a donc la même quantité de lait concentré sucré et de lait demi-écrémé.
Ajouter les 5 oeufs.
Mettre en route le blender pendant 1 minute pour bien homogénéiser.
Verser dans le moule sur le caramel. Mettre le moule dans un plat allant au four et remplir ce plat d’eau bouillante. Le moule doit être immergé à moitié au moins.
Couvrir d’un papier aluminium et mettre au four à 180°C.
Cuire pendant 1h15-1h30. La crème doit être prise et trembler très légèrement au centre. Il suffit également de planter un couteau. Elle doit ressortir propre.
Laisser refroidir complètement puis mettre au réfrigérateur pendant trois heures. Au moment de servir, remplir l’évier d’eau très chaude et y tremper 10 secondes le moule.
Renverser le pudim de leite sur un plat de service… C’est prêt!
