Je suis allé dans le Périgord il n’y a pas longtemps et j’ai pu y découvrir plein de spécialités à base de noix. Cela tombe bien, j’en suis fou ! Je vous présente les pralines de noix qui pourront être grignotées telles quelles, ou rentrer dans la composition de recettes que je vais vous proposer très rapidement. Elles se conserveront très longtemps. Très faciles à faire, vous pourrez aussi les offrir dans un joli paquet. Vous verrez qu’elles auront beaucoup de succès…
Choisissez vos cerneaux de noix pour qu’ils soient les plus beaux possibles.
Versez le sucre dans une large poêle avec un peu d’eau juste pour l’imbiber et mélangez avec une cuillère. Faites chauffer sur feu modéré.
Quand les bulles épaississent, ajoutez les noix.
Mélangez pour bien les enrober du sirop épais.
Toujours en mélangeant, faites chauffer jusqu’à ce que le sirop cristallise. Il va sécher.
Faites en sorte que les noix soient bien enrobées de ce sucre cristallisé.
Continuez de mélanger pour éviter de brûler les noix. Faites chauffer jusqu’à ce qu’une fine couche de caramel enrobe les noix. Tout le sucre ne doit pas fondre, mais juste une très fine couche.
Quand c’est fait, versez sur un papier sulfurisé de bonne qualité ou un tapis siliconé. Laissez les noix refroidir.
Dès qu’elles ont tiédi, mettez-les dans une boite hermétique à l’abri de l’air. Elles pourront se conserver très longtemps, en attendant de les utiliser dans une recette ou de les manger telles quelles !!
