Cette spécialité thaïlandaise au goût incomparable et véritablement savoureuse, va régaler tous les amoureux de ce pays. Un plat assez relevé mais dont le piquant ne dure pas trop longtemps. Les ingrédients se trouvent dans toutes les épiceries asiatiques. Une fois les éléments réunis, le plat se cuit en quelques minutes à peine. Un plat authentique et très facile à réaliser.
Préparer tous les ingrédients spécifiques à cette recette. Le basilic thaï est très particulier et ne peut pas être remplacé par du basilic de chez nous…
Désosser les hauts de cuisse et enlever la peau. Les couper en très petits morceaux. Il faut presque les hacher.
Avec des gants en latex, équeuter et égrainer les piments oiseaux rouges. Ce sont les graines qui donnent le piquant vraiment piquant, alors sans le plat sera relevé mais ce ne sera pas insupportable.On peut laisser les graines mais alors là c’est l’incendie de bouche assuré!
Couper les oignons chinois et hacher finement l’ail. Détacher les feuilles des branches du basilic.
Préparer la sauce en mélangeant le sucre et le nuoc nam.
Mettre l’huile à chauffer dans un wok sur feu fort. Ajouter l’ail et le piment.
Quand l’ail se colore, ajouter les oignons chinois.
Puis le poulet et bien mélanger.
Le poulet va rendre du jus, il faut donc continuer à mélanger sur feu fort.
Quand tout le jus s’est évaporé, ajouter la sauce sucrée au nuoc nam.
Puis les feuilles de basilic thaï.
Bien mélanger et laisser cuire sur le feu fort quelques instant avant de servir.
