Il y a un an, je vous avais publié mon voyage culinaire de Ho Chi Minh (que vous pouvez consulter ICI). Je vous avais promis des recettes. Alors en voilà une nouvelle avec ce délicieux porc au caramel. Sa superbe couleur est totalement naturelle et la sauce très riche en saveurs. Beaucoup de recettes proposent une cuisson assez courte, mais je préfère obtenir une viande très tendre, et le seul moyen est de la cuire plus longtemps. Vous pourrez servir ce porc (et le cuire par la même occasion) dans le plat en terre vietnamien traditionnel et/ou l’accompagner avec des quartiers d’œuf dur.
Pour ce plat, j’ai pris de la poitrine fraiche. J’ai simplement enlevé la peau que vous pouvez bien sûr laisser. Cette pièce est assez grasse. C’est souvent ce morceau qui est dans ce plat au Vietnam. N’hésitez pas à mettre de l’échine sans os.
Mettez-la dans un récipient et ajoutez 20g de sucre (sur les 100), les 3 cuillerées à soupe de nuoc mâm, la poudre de fond de volaille. Mélangez bien.
Mettez les 80g de sucre qui restent dans une casserole sur feu assez vif.
Laissez-le fondre doucement sans le brûler.
Il doit avoir une belle couleur. Quand c’est le cas, versez dans la casserole 350ml d’eau. Cela va faire du bruit, c’est normal !
Ajoutez la viande avec sa marinade.
Versez aussi l’huile et portez à ébullition.
Coupez en petits morceaux l’échalote. Prenez la partie la plus blanche des ciboules et coupez-les en morceaux. Pareil pour le petit piment rouge.
Direction la casserole ! Pour le piment, vous pouvez enlever un peu de graines pour éviter d’avoir un plat trop fort. Ce n’est pas le but de cette recette.
Laissez maintenant cuire sur feu modéré au moins 1h à 1h30.
Au bout de ce temps, la viande doit être très tendre et la sauce s’épaissit très légèrement. La couleur devient rouge et le gras de la viande transparent. Ajoutez du poivre noir du moulin.
Si la viande n’est pas cuite, versez un peu d’eau et poursuivez la cuisson. Vous pouvez recommencer jusqu’à ce qu’elle soit parfaite à votre goût ! Comme le dit un commentaire en dessous, la sauce doit être finalement assez liquide.
Servez le porc au caramel avec le vert des ciboules coupées en morceaux. Vous pouvez aussi ajouter un œuf dur coupé en quartier. Un vrai délice ! À servir avec du riz nature.
