Je suis allé récemment dans le tout petit restaurant vegan « Le Pagalou » à Paris et j’ai adoré plein de leurs plats, mais aussi leurs desserts très originaux. J’ai goûté entre autres, ce pâté de noix de cajou très surprenant. Je vous en propose ma version (car je n’ai pas tous leurs secrets !). L’association de l’aneth et de la noix de cajou est totalement inattendu, mais donne quelque chose de très addictif ! La veille, faites tremper les noix de cajou crues dans un grand volume d’eau.
Le lendemain (au moins 5 heures ou une nuit donc…) égouttez-les.
Elles sont normalement devenues très molles. Placez-les dans un mixeur.
Réduisez en une purée pas trop fine.
Ajoutez le jus de citron et mixez de nouveau un peu.
Prenez quelques branches d’aneth (pas besoin de mettre le bouquet entier).
Versez la purée de noix de cajou et l’aneth dans un récipient.
Mélangez soigneusement.
Salez à votre goût (il faut contrebalancer le côté sucré des noix de cajou). Mélangez de nouveau et laissez reposer au frais au moins une heure avant de déguster tartiné sur du pain. Attention, très très bon !!
