Mini "Tatins" de Foie Gras

J’avais dégusté ces petites « tatins » de foie gras, pain d’épices et pommes à Bordeaux (voir le voyage culinaire: Bordeaux!). J’ai donc cherché à refaire cette recette et je suis arrivé à ce résultat. Ces mini-tatins vont pour moi devenir un classique car c’était tout simplement délicieux!! Une recette parfaite si il y a trop de foie gras après les fêtes, ou pour l’accommoder d’une manière originale. Je fais cuire les pommes dans le gras du foie gras (le gras jaune) avec des épices puis elles sont flambées au calvados avant de lentement caraméliser avant de trouver leur place sur une tranche moelleuse de foie gras mi-cuit!

  • Couper des tranches pas trop épaisses de pain d’épices. Avec un cercle de 6cm, tailler directement dans la tranche comme un emporte pièce.
  • Faire de même avec le reste des tranches.
  • Couper 4 bonnes tranches de foie gras mi-cuit. Enfoncer la tranche dans le cercle…
  • Puis combler les trous avec les morceaux qui restent. Réserver au réfrigérateur.
  • Pour cuire les pommes, utiliser le gras jaune des tranches de foie gras. En mettre l’équivalent d’une cuillerée à soupe.
  • Couper les pommes en quartiers puis en petits morceaux.
  • Mettre la poêle sur feu assez fort (en surveillant quand même!!). Ajouter les pommes dans le gras fondu.
  • Saler, poivrer, saupoudrer de mélange « 4 épices » et saupoudrer légèrement de sucre.
  • Quand les pommes commencent à être tendres, ajouter le cognac.
  • Puis flamber! Depuis petit, j’aime ce moment où l’on flambe le contenu d’une poêle!
  • Puis laisser cuire les pommes jusqu’à ce qu’une partie d’entre elles soit fondue et caramélisée.
  • Laisser complètement refroidir. Remplir les cercles avec la compotée de pommes.
  • Lisser la surface avec une cuiller. Laisser reposer au frais au moins trois heures.
  • Avant de servir passer un coup de sèche-cheveux sur le bord extérieur du cercle.
  • Puis décercler délicatement.
