On dirait des sablés bretons mais seulement avec les yeux. Dès qu’on les hume, on sent qu’ils sont riches en amandes… De délicieux macarons encore légèrement craquants à l’extérieur et bien tendres à l’intérieur. Il y a tellement de sortes de macarons en France, que c’est un vrai challenge de vouloir tous les goûter et les tester. Je tiens cette recette d’une des amies (Brigitte) de ma mère qui a eu envie de partager avec nous tous ces macarons d’Amiens. Pour notre plus grand plaisir !
Mélangez la poudre d’amandes et le sucre. Si vous avez un poudre d’amandes pas trop fine, c’est encore mieux !!
Dans un bol, mélangez le reste: le miel, le jaune, le blanc, la vanille, l’extrait d’amande amère, la confiture d’abricots.
Versez dans le mélange poudreux puis malaxez.
Vous devez avoir une sorte de pâte d’amande assez ferme.
Mettez la pâte en un boudin de 4 centimètres de diamètre dans du film étirable. Mettez ensuite ce boudin sur une plaque à pâtisserie pendant 1 heure au congélateur. Cela va raffermir la pâte que vous pourrez couper en tronçons.
Quand la pâte est assez ferme pour être découpée sans être écrasée, coupez des tranches de 1 centimètre d’épaisseur.
Enfournez dans un four préchauffé à 165°C pendant 17 à 20 minutes. Les macarons doivent être dorés à l’extérieur et encore bien tendres à l’intérieur.
Conservez-les dans un boite hermétique à l’abri de l’air et de l’humidité.
