Après le succès de l’Assassin, le gâteau que j’ai mis au point à base de caramel et de chocolat (qui donne une texture incroyable si l’on utilise le moule de la bonne taille!), je me suis dit qu’une ganache pour des macarons sur le même principe serait intéressante. J’ai donc essayé pour voir et les macarons sont vraiment délicieux: une ganache à base de caramel salé et chaud versé sur du chocolat au lait. La texture est moelleuse et ressemble presque à du carambar mou! Alors à vos casseroles!
Réaliser une recette de macarons de base. Toutes les explications sont ICI.
Mettre le sucre, le sel et le sirop de glucose dans une casserole sur feu modéré avec un trait d’eau.
Obtenir un caramel assez soutenu car la crème va l’éclaircir. Faire chauffer la crème au micro-ondes, pour éviter les projections (la crème froide rendrait le caramel fou!). Ajouter la crème doucement en ne cessant jamais de remuer.
Faire recuire la crème pour faire fondre tout le sucre.
Verser le caramel (que l’on laisse retomber à 100°C) sur le chocolat au lait.
Laisser reposer trente secondes pour bien laisser le chocolat fondre.
Puis mélanger doucement avec une cuillère.
Filmer la ganache au contact (avec un film étirable directement sur la ganache) puis laisser refroidir complètement. Quand la ganache est moelleuse (pas coulante) la mettre en poche munie d’une douille de 12mm. Garnir les coques de macarons deux à deux
Comme d’habitude pour les macarons, les mettre dans une boite hermétique pendant au moins 24h au frais avant de les dévorer!
