Cela fait longtemps que je voulais cuisiner du lapin sur mon blog de cuisine. C’est chose faite avec ce lapin aux pruneaux à la sauce ultra savoureuse et onctueuse ! Cela me rappelle des souvenirs d’enfance. Je n’en avais pas mangé depuis des siècles !! Mais ce plat est toujours aussi délicieux. Avec quelques pommes de terre cuites à la vapeur, on n’aura même pas l’impression de faire beaucoup d’excès. Bon enfin presque !
Mettez l’huile d’olive et la moitié du beurre dans la cocotte sur feu vif et placez les morceaux de lapin. Salez et poivrez.
Retournez la viande et laissez dorer sur toutes les faces.
Quand tous les côtés ont pu dorer un peu, enlevez la viande de la cocotte.
Placez les lardons et faites les griller également.
Hachez l’oignon et les gousses d’ail.
Débarrassez les lardons et mettez l’oignon et l’ail hachés dans le gras. Baissez le feu si nécessaire pour ne pas brûler le fond de la cocotte, car ce sont les sucs grillés qui vont donner un fabuleux goût au plat.
Quand ils commencent à griller légèrement, ajoutez le reste de beurre et la farine.
Mélangez à la cuiller pendant 20 secondes puis ajoutez un peu de bouillon de légumes. Grattez bien le fond de la cocotte pour récupérer les sucs de cuisson.
Puis un peu de vin blanc.
Mélangez vivement. La sauce va épaissir très rapidement. Quand vous n’avez plus aucun grumeaux, vous pouvez ajouter plus de liquide.
Placez la viande sur la sauce et tout le jus qu’elle aura rendu, contenu dans l’assiette.
Ajoutez les lardons (toujours avec le jus) et 250g de pruneaux.
Ajoutez le reste du bouillon de légumes et de vin blanc.
Fermez la cocotte et laissez cuire 45 minutes.
Au bout de ce temps, ouvrez la cocotte, ajoutez les 100g restant de pruneaux et poursuivez la cuisson pendant 50 minutes à une heure.
Normalement à ce stade la sauce est onctueuse. Il faut bien sûr saler et poivrer à son propre goût. Si vous voulez une sauce encore plus onctueuse (attention à ne pas tout évaporer non plus !! ) vous pourrez poursuivre la cuisson de la sauce sans la viande puis l’ajouter à la toute fin. Servez ce plat encore bien chaud avec des pommes de terre vapeur ou des pâtes fraiches !
