Je continue dans l’exotisme des desserts après les tartelettes à la mangue! En fait ce gâteau à la noix de coco vient d’un accident. En voulant réaliser le pralin de coco pour les tartelettes, j’ai tout d’abord raté ma première version. J’ai obtenu une pâte molle caramélisée à la noix de coco. Plutôt que de la jeter, j’ai ajouté un peu au pif les ingrédients classiques des gâteaux et j’ai obtenu de délicieux petits gâteaux à la noix de coco sur lesquels j’ai ajouté quelques morceaux d’ananas caramélisés à la vanille. On pourra bien sûr directement ajouter l’ananas dans la pâte, mais je trouvais simplement plus joli de les mettre dessus!
Mettre le sucre et la noix de coco séchée dans une poêle.
Ajouter l’eau et mettre sur feu modéré.
Mélanger constamment à la cuiller. Le mélange devient pâteux.
Petit à petit le tout caramélise.
On peut laisser caraméliser au maximum sans bien sûr laisser brûler. Mettre la noix de coco dans un bol. Laisser refroidir 20 minutes. Ajouter ensuite l’oeuf.
Ajouter également le beurre fondu et la vanille liquide.
Puis enfin la farine. Bien mélanger pour obtenir une pâte homogène.
Verser la pâte dans 5 petits moules de 5 cm ou un seul grand de 20.
Laisser cuire 20 minutes à 170°C en surveillant la cuisson.
Démouler et laisser refroidir sur une grille.
Couper l’ananas frais en morceaux. Si il reste de l’ananas, il suffira de le manger!!
Mettre le sucre avec la vanilline de la gousse de vanille dans une poêle.
Ajouter un tout petit d’eau et le beurre.
Faire revenir les morceaux d’ananas.
Laisser cuire jusqu’à ce que le sucre caramélise légèrement.
Disposer les morceaux d’ananas sur les gâteaux à la noix de coco et déguster!
