Les photos ne rendent pas justice à ce plat exquis! Voici la recette des Gambas flambées de Nadine. Une recette rapide d’exécution, simple et surtout vraiment délicieuse. La touche d’originalité de cette recette, tient au fait que Nadine nous a flambé ses gambas avec du Porto. Et le résultat est surprenant! Une petite note sucrée qui accompagne à merveille l’ail, l’oignon et le persil et qui souligne idéalement le goût subtil de ces crustacés.
Commencer par éplucher l’ail et l’oignon. Couper l’oignon en morceau et l’ail en tranches.
Mettre le beurre sur feu modéré. Quand il rissole, ajouter l’ail.
Laisser colorer l’ail légèrement et le laisser développer son parfum. Ajouter l’oignon et le persil.
Bien mélanger puis poser les gambas (sans la tête mais avec leur carapace) sur le lit d’ail, d’oignon de persil.
Augmenter légèrement le feu. Retourner les gambas pour cuire l’autre face.
Chauffer le porto dans une petite casserole.
Flamber le porto puis le verser sur les gambas. Conseil de Bernard: pour flamber, je verse directement l’alcool froid dans la poêle puis je flambe! Mais à chacun sa méthode!
Bien mélanger pour fondre les sucs au fond de la poêle.
Servir les gambas immédiatement telles quelles ou accompagnées de riz!
