Galettes de pois chiches, menthe, coriandre et cumin
Je mange de plus en plus souvent des galettes végétales à la maison. Parfois je manque de temps et j’en achète, ce qui me donne l’occasion de tester de nouvelles choses, puis d’imaginer comment les faire moi-même, pour vous proposer la recette par la suite. Je vous donne donc cette recette de galettes de pois chiches au cumin, menthe et coriandre ! Ultra-savoureuses, elles sont surtout hyper faciles à faire avec des produits très faciles à trouver. De plus, pour un prix modique, vous aurez près d’une vingtaine de belles galettes que vous pourrez réchauffer à la poêle, ou même au grille-pain !
Placez les pois chiches en boite égouttés dans un récipient. Nul besoin de les rincer. Cassez-y les œufs, versez le son d’avoine, la farine de riz, la levure chimique et les flocons de pomme de terre. Je prends en fait pour cela, la poudre pour purée de pomme de terre. Quand je veux une purée, je fais bien sûr une purée maison, mais j’achète cette poudre pour ce genre de recette.
Ajoutez l’huile, le lait et le cumin. Salez et poivrez.
Mixez le tout en une purée fine. J’utilise pour cela un mixeur plongeant, mais vous pouvez aussi faire cela au mixeur classique.
Hachez finement les feuilles du bouquet de menthe et de coriandre.
Versez dans la pâte.
Mélangez bien.
Pour faire cuire mes galettes, j’utilise une poêle à blinis en fonte. Mettez un peu d’huile d’olive puis versez la pâte pour réaliser les galettes. Il faudra vous aider d’une cuillère pour étaler la pâte.
Quand le dessus est plus ferme, retournez les galettes.
Faites cuire des deux côtés pour avoir de belles galettes bien dorées.
Et voilà ! Faites de même pour toute la pâte.
Ces galettes sont délicieuses avec une simple salade ou accompagnées de légumes. Vous pourrez les conserver au frais dans une boite hermétique, ou au congélateur.
