J’ai découvert les Dunes à Bordeaux, dans une pâtisserie. On m’avait dit d’y faire un tour pour les goûter. Petit coup de foudre pour cette recette simple à faire chez soi sans difficulté. Elles sont parfaites pour le dessert d’un repas d’été ! Il s’agit ni plus ni moins de chouquettes garnies d’une crème. Je les ai faites à l’instinct et j’ai fait une crème pâtissière vanillée mélangée à de la crème chantilly (avec un peu de mascarpone). Cela donne une recette pas trop sucrée, ultra fraiche et cela sera encore plus irrésistible si vous y mettez des framboises fraiches. C’est juste une idée comme ça. ????
Mettez les 100g de jaunes d’oeufs dans une jatte avec l’intérieur de la gousse de vanille, la moitié du sucre (60g donc) et la poudre à crème.
Mélangez bien avec un fouet.
Faites bouillir le lait avec l’autre moitié du sucre et le beurre.
Quand le lait bout, versez-en une petite quantité sur le mélange jaunes-poudre à crème.
Mélangez bien.
Et reversez ce mélange dans la casserole dans le reste de lait chaud.
Remettez à cuire sur feu doux. Laissez bouillir trois à quatre minutes tout en fouettant.
Versez la crème pâtissière dans un plat.
Et couvrez d’un film étirable directement au contact de la crème. Laisser refroidir complètement puis stockez au frais.
Le jour même, faites vos chouquettes comme indiqué ICI. Versez la crème, le mascarpone et le chantifix dans la cuve de votre robot ou dans un récipient. Tout doit être bien froid pour monter au mieux.
On voit même ici la buée du froid de la cuve !
Fouettez à grande vitesse pour obtenir une crème chantilly parfaite. Elle n’est pas sucrée, car la crème pâtissière l’est déjà !
Versez la crème pâtissière dans un récipient et fouettez-la pour la lisser.
Ajoutez alors la chantilly petit à petit en la mélangeant comme pour une mousse, en soulevant bien.
Quand vous avez terminé, goûtez la crème !
Mettez-la dans une poche à douille. J’ai ici une douille spéciale qui permet de garnir les choux. Mais une douille classique de 8mm fera aussi l’affaire !
Garnissez les chouquettes par en dessous.
Faites de même pour la centaine de chouquettes.
Puis saupoudrez de sucre glace.
Le mieux est de le dévorer assez vite. Vous pouvez anticiper et les laisser au frais une ou deux heures, mais après tout va ramollir. Vous pouvez donc diviser la recette par deux si il y en a trop !
