Crumb Cake de New York

Voici une nouvelle recette américaine que j’affectionne particulièrement en hiver. Pour tous ceux qui sont allés aux États-Unis, vous avez peut être découvert ce gâteau réconfortant. Comme souvent, c’est une variation d’une recette européenne, à savoir dans le cas présent, le « Steuselkuchen » allemand. Mais le crumbcake de New-York est encore plus excessif! Il se mange avec un grand café et en général une part suffit. Autant je trouve nos gâteaux vraiment parfaits et délicieux, mais les américains ne sont pas en reste. Ce gâteau est moelleux au centre avec un dessus complètement croustillant.

  • Préparer la pâte à crumble. Mettre les deux sucre, le sel et la cannelle dans le bol du robot.
  • Ajouter le beurre doux fondu. 
  • Ajouter la farine en une fois.
  • Et mélanger avec le « k » du kitchenaid ou du kenwood jusqu’à ce que la farine soit incorporée. 
  • Mettre la pâte à crumble de côté le temps de réaliser la suite de la recette.
  • Préparer la pâte à gâteau. Mettre la farine, le sucre, le sel, le bicarbonate de soude. dans le bol du robot.
  • Ajouter le beurre très mou et commencer à mélanger, toujours avec le « k ».
  • Quand le beurre est incorporé, ajouter les oeufs, la vanille et le lait fermenté. 
  • Mélanger maintenant à grande vitesse pendant 2-3 minutes pour aérer la pâte. Elle blanchit et devient plus volumineuse. 
  • Verser la pâte dans un moule carré de 21cm sur 21cm, garni de papier sulfurisé. Vaporiser de bombe de graisse de démoulage. 
  • Verser la pâte à crumble sur le gâteau. 
  • Mettre au four à 170°C pendant 45 minutes ou plus. Le gâteau doit être cuit au centre.
