Crèmes Merveilleuses au Chocolat Blanc, Vanille et Framboises
Si vous avez mon premier livre « Les desserts de Bernard », vous avez pu remarquer mes recettes de macarons qui sont celles que je donne lors de mes ateliers. Et peut être avez-vous vu ma ganache merveilleuse à la vanille? Je la fais systématiquement goûter pendant mes cours et à chaque fois les élèves adorent. Je voulais retrouver cette sensation dans des petits pots de crème avec le même crémeux que dans les crèmes caramel de Clo. Et en ajoutant des framboises fraiches, c’est vraiment d’une douceur incroyable. Une texture parfaite et un goût frais et envoûtant, je vous présente ma dernière petite folie pour vous faire oublier les maillots de bain de cet été !
Commencez par vider l’intérieur de la gousse de vanille dans les jaunes mélangés à 15g de sucre.
Pendant ce temps, portez sur feu doux à frémissement le lait, la gousse vidée, la crème et les 15g de sucre restants.
Fouettez les jaunes/sucre/vanille au fouet pour blanchir et rendre mousseux au maximum. Comme il n’y a pas beaucoup de sucre, cela ne va pas blanchir tant que cela.
Versez le liquide sur le mélange mousseux tout en mélangeant.
Reversez le tout dans la casserole sur feu doux et tout en mélangeant, portez le tout à 88°C. C’est donc une crème anglaise que vous faites, simplement beaucoup moins sucrée.
La crème doit être bien nappante.
Hors du feu (vous pouvez l’éteindre !) joutez les feuilles de gélatine trempée et essorée.
Puis le chocolat blanc. J’ai utilisé de la couverture Ivoire de valrhona.
Versez hors du feu et mélangez soigneusement. Si il y a souci dans l’apparence, vous pouvez passer un coup de mixeur plongeant.
Voilà ! Laissez tiédir à température ambiante en mélangeant de temps en temps.
Pourquoi laisser tiédir? Car sinon les framboises vont cuire !! Mettez des framboises fraîches dans des petits ramequins.
Et versez la crème par dessus.
Laissez au réfrigérateur pendant au moins 4 heures avant de déguster…
