Vous ne connaissez pas encore Clo? C’est bien dommage ! Mais bientôt vous allez faire ses petites crèmes au caramel et vous en parlerez dans les chaumières… Trêve de plaisanterie, Clo est une très bonne amie qui nous avait fait des petits pots en desserts et je lui ai donc demandé sa recette. C’est entre la crème anglaise prise, la panacotta et la crème brûlée, sans longue cuisson. Malgré l’ingrédient qui permet de tenir le tout, qui pourrait laisser penser que le résultat est trop ferme, la texture est parfaitement onctueuse et crémeuse. Un délice à faire et refaire. Un grand merci à notre chère Clo pour cette fabuleuse recette !
Préparez tout d’abord le caramel à sec. Versez une petite partie des 120g de sucre dans une casserole sur feu moyen.
Faites fondre le sucre en caramel. Faites bien attention à ne pas le brûler ! Ajoutez ensuite petit à petit le reste du sucre, en veillant à ce qu’il caramélise bien.
Quand les 120g de sucre sont caramélisés, versez le lait. Laissez ensuite chauffer très doucement pour que tout le caramel fonde dans le lait.
Ajoutez la crème quand toute le caramel a fondu. Portez le tout à ébullition. Pendant ce temps, fouettez les jaunes avec les 30g de sucre pour obtenir une mousse qui blanchit un peu.
Versez le lait/crème au caramel sur le tout.
Portez la crème à 88-89°C. Comme pour une crème anglaise. Elle doit napper la cuillère.
Faites tremper les feuilles de gélatine (2 feuilles et demi), essorez-les dans vos mains et ajoutez les dans la crème chaude. Mélangez bien à la cuillère.
Versez dans 4 ramequins individuels ou pots.
Laissez refroidir à température ambiante puis mettez au frais au moins 4 heures (une nuit c’est mieux !) avant de les déguster…
