Cette délicieuse crème glacée au praliné est la bienvenue au moment du dessert pour se rafraichir en été, ou se réconforter en hiver! Version personnelle de ce grand classique, cette recette s’adresse sans doute aux heureux propriétaires de machines à glaces!
Commencer par réaliser une pâte de praliné (recette ici) avec 50% d’amandes et 50% de noisettes (même avec la peau!).Mettre la moitié du sucre (70g) avec les jaunes et mélanger rapidement (pas besoin de blanchir dans cette recette).
Ajouter le super neutrose (stabilisateur à sorbet).
Et le praliné en pâte.
Dans une casserole, faire chauffer sur feu doux le lait, la poudre de lait et le reste du sucre.
Quand le lait bout, le verser tout en mélangeant au fouet sur le mélange jaunes/sucre/praliné.
Remettre sur feu doux et cuire comme une crème anglaise, en portant le mélange à 85°C.
Quand la température souhaitée est atteinte, ajouter la crème entière froide en dehors du feu pour arrêter la cuisson.
Laisser refroidir puis stocker une nuit au frais. Le lendemain, fouetter le mélange assez vivement, ou même avec un mixeur plongeant et mettre en turbine à glace ou sorbetière.
Mettre dans un pot dès que l’hélice ne tourne plus et stocker au congélateur au moins 2 heures avant de déguster pour un crémeux parfait!
