Voilà une glace qui va satisfaire beaucoup de monde! Une glace bien crémeuse réalisée avec un caramel au beurre salé maison. A déguster avec des tuiles aux amandes, des palets bretons ou bien des sablés croustillants et fondants!
Commencer par préparer le caramel à sec en prenant 180g sur les 200 de sucre. Mettre ces 180g dans une casserole sur feu modéré.
Laisser chauffer. Le sucre va commencer à fondre.
On peut tout à fait mélanger à la cuiller en bois. Si l’on devait faire un caramel à sec pour de la confiserie, ce serait une hérésie! Mais dans ce cas, comme le caramel va de toute façon refondre, impossible qu’il cristallise. Pendant ce temps, faire chauffer a crème entière liquide au micro-onde pendant une minute.
Laisser le sucre se caraméliser. Il doit avoir une belle couleur assez prononcée.
Ajouter la crème chaude (de cette façon on évite une trop forte différence de température et les projections) hors du feu et bien mélanger.
Quand toute la crème est incorporée, ajouter le beurre, toujours hors du feu.
Remettre sur feu modéré et laisser recuire et bouillir pour faire fondre les éventuels morceaux de sucre résistants!
Ajouter les 500ml de lait demi-écrémé et la fleur de sel.
Et remettre à chauffer sans toutefois porter à ébullition.
Mettre les 20g de sucre restant et le stabilisateur à glace (superneutrose).
Ajouter les jaunes d’oeufs et bien mélanger sans pour autant blanchir.
Verser le lait caramélisé.
Puis remettre le tout sur feu doux. Cuire comme pour une crème anglaise en portant le tout à 86°C.
Une fois la température atteinte, laisser refroidir complètement et laisser maturer au réfrigérateur une nuit.
Le lendemain, passer la crème au mixeur plongeant pour bien lisser le stabilisateur.
Mettre en turbine à glace.
Et mettre en pot puis au congélateur pour deux ou trois heures avant de consommer.
