Voici une délicieuse recette de crème glacée à la pistache. Une glace vraiment crémeuse! Vous aurez besoin pour celle-ci de pâte de pistache… Vraiment divin avec le Gâteau Macaron Pistache!
Mettre la pâte de pistache, le glucose atomisé et la poudre de lait entier dans une jatte.
Mélanger le stabilisateur avec le sucre dans un autre bol à part.
Conseil de Bernard: on peut tout à fait réaliser cette glace sans le super neutrose, elle sera tout autant délicieuse! Cependant avec celui-ci, elle sera encore plus crémeuse et résistera mieux à la fonte!
Ajouter la crème liquide dans le mélange à base de pâte de pistache. Bien mélanger puis ajouter le lait.
Mettre la casserole sur feu moyen. Mélanger constamment au fouet et vérifier la température avec un thermomètre.
Ajouter le mélanger sucre/stabilisateur à 35°C. Bien mélanger.
Puis les jaunes d’oeufs à 40°C.
Tout en mélangeant constamment, porter la préparation à 85°C. Exactement comme pour une crème anglaise. Laisser refroidir puis stocker au frais pour 2 heures.
Mixer au besoin la préparation au mixeur plongeant ou au blender, puis turbiner en sorbetière. Mettre en pot puis sotcker au congélateur au moins 3 ou 4 heures avant de consommer.
