Il y a longtemps, presque 10 ans, j’avais posté une tarte meringuée au citron. Je vous propose cette fois ces carrés au citron avec une crème riche mais juste incroyable en goût, très citronnée comme j’aime. C’est finalement un peu comme des shortbreads bien riches en beurre surmontés de cette crème lemon curd. C’est un peu la version américaine de nos tartelettes au citron ! Un véritable délice bien coloré !
Mettez le beurre demi-sel, le sucre et la farine dans la cuve de votre robot ou dans un récipient.
Ajoutez le zeste du citron non traité.
Mélangez du bout des doigts ou avec la feuille de votre robot.
Quand la pâte est homogène, arrêtez de mélanger.
Chemisez le moule de papier sulfurisé. Disposez la pâte dans le fond de la façon la plus équilibrée possible sur l’épaisseur.
Faites cuire la pâte 30 minutes à 180°C.
Pour la crème citron : mettez les œufs et les nombreux jaunes dans une casserole avec le sucre. Mélangez au fouet pour homogénéiser.
Ajoutez le zeste des 3 citrons.
Pressez les citrons pour avoir la quantité de jus nécessaire.
Versez le jus dans la casserole en mélangeant au fouet. Faites chauffer sur feu doux pour amener le tout à 77-78°C.
Mélangez en permanence. À la température souhaitée, vous allez voir que la consistance change radicalement et s’épaissit.
Versez la crème sur la pâte cuite, mais en la filtrant à travers un fin tamis.
Forcez un peu la crème avec une spatule. Vous aurez une crème très citronnée et sans zeste, très lisse.
Secouez un peu le moule pour répartir la crème.
Recouvrez de papier aluminium.
Remettez à cuire 12 minutes à 175°C. Laissez ensuite refroidir avec le papier jusqu’à température ambiante puis mettez au frais au moins 3 heures. Vous pouvez démouler le gâteau.
Coupez en petites parts.
Puis si vous le souhaitez, décorez d’un peu de sucre glace.
