Le Boeuf à la poire Nashi est un délicieux boeuf extra-tendre qui reste pendant plusieurs heures dans une marinade à base de Poire Nashi. Cette poire appelée également « Poire Shingo » ou « Poire Coréenne » est entre la poire et la pomme mais en plus gros! Ce boeuf cuit au wok et devient légérement caramélisé.
Eplucher l’oignon, l’ail, la poire en enlevant le trognon, puis mettre tous les ingrédients sauf la viande et les graines de sésame dans un blender et mixer le tout pour obtenir une marinade liquide.
Le bicarbonate de soude va attendrir considérablement la viande. C’est pour cette raison que le boeuf est toujours si tendre dans les traiteurs chinois, ils ajoutent du bicarbonate de soude. Il ne faut vraiment mettre qu’une cuillerée à café non bombée de bicarbonate car sinon la viande va perdre son goût!
Couper le boeuf en fines lamelles et les mettre dans une jatte.
Verser la marinade sur la viande.
Et couvrir le tout de graines de sésame grillé, puis bien mélanger. Fermer avec un film alimentaire et réserver au frais pendant 3 heures. La viande va absorber presque tout le jus.
Après trois heures, prendre un wok, ou une sauteuse, et mettre de l’huile au fond (l’équivalent de 4 cuillerées à soupe!). Mettre sur feu vif.
Faire revenir la viande en mélangeant avec une cuiller en bois constamment.
Conseil de Bernard: Je préfère faire cuire la viande en plusieurs fois. Si on cuit d’un coup la totalité de la viande, elle va mal cuire. Je mets donc moins d’huile à chaque fois et je cuis le tout en trois fois. Comme cela la viande a toute la place pour bien caraméliser!
Faire revenir jusqu’à ce que la totalié de la marinade se soit évaporée. La viande commence à ce moment là à caraméliser.
Servir immédiatement avec du riz basmati ou du riz gluant. Parsemer de graines de sésame grillé.
