La Nougatine n’est pas une confiserie si difficile à faire si tant est que l’on a les ingrédients! Du sirop de glucose, du fondant et des amandes hâchées. On peut utiliser des amandes effilées pour obtenir une nougatine un peu plus fine. Le sirop de glucose évite au tout de cristalliser. On peut donner la forme que l’on veut à la nougatine si les instruments pour couper sont huilés.
Commencer par faire colorer les amandes au four pendant 10 minutes sur 150°C. Remuer réguliérement. Sur la photo on peut voir qu’elles sont à peine grillées. (bon le flash n’aide pas!)
Mettre le sirop de glucose et le fondant dans une casserole sur feu doux. Le fondant va fondre. Pour info le sirop de glucose est super épais, c’est assez amusant à voir! Il a d’ailleurs été utilisé mélangé à autre chose pour servir de bave monstrueuse dans le film Alien!!
Le mélange va commencer à bouillir, on peut remuer de temps en temps.
Il faut laisser le tout caraméliser. Le caramel doit être brun foncé car les amandes et le beurre vont l’éclaircir!
Ajouter les amandes colorées et bien mélanger.
Ajouter ensuite le beurre salé.
Et bien mélanger, toujours sur feu doux jusqu’à ce que la nougatine décolle un peu du fond de la casserole.
Verser ensuite sur un marbre huilé, ou un silpat (tapis siliconé) ou alors sur une feuille de papier siliconé sur un support qui résiste à la chaleur!
Etaler avec un rouleau huilé et couper la nougatine dans la forme désirée avec un couteau huilé également.
Il faut absolument conserver la nougatine dans une boîte hermétique car l’humidité lui est fatale! On peut réaliser des coupes de glace en nougatine et des présentoir pour exhiber des gâteaux!
