Cette recette typique de la période de Noël qui vient de la ville de Bâle, me rappelle beaucoup les ElisenLebkuchen que j’adore. En moins compliqué et plus rapide à préparer. Naturellement sans farine et sans gluten (certains me demandent des recettes), ils sont absolument irrésistibles. Avec une touche d’épices, ils sont pleins à craquer de chocolat et d’amandes. Le seul inconvénient si on doit en trouver un, est qu’il faut les laisser sécher à l’air libre avant de les cuire. Cela vous laissera le temps de saliver devant eux !!
Mettez les amandes entières au mixeur pour les réduire en poudre pas trop fine.
Versez cette poudre dans un récipient et ajoutez le sucre, le cacao, les épices.
Râpez finement les 100g de chocolat noir et mettez-le dans le mélange précédent.
Versez les 90g de blanc d’œuf (mettez 2 blancs dans un récipient puis pesez-en la quantité nécessaire).
Mélangez et voilà, la pâte est prête !!
Étalez-la sur un papier sulfurisé sur 3-4mm d’épaisseur, en mettant du sucre en poudre pour éviter que la pâte ne colle trop.
Laissez ensuite sécher cette pâte à l’air libre, étalée, telle quelle, pendant une nuit ou même 24h. Remettez un peu de sucre en poudre sur la surface et en dessous. Le lendemain, coupez-la à l’emporte-pièce.
Placez les gâteaux sur une plaque à pâtisserie garnie de papier sulfurisé.
Faites-les cuire à 145°C pendant 15-17 minutes. Les gâteaux doivent rester encore moelleux au milieu.
Vous pourrez-les conserver plusieurs jours dans une boite hermétique. Enfin si vous y arrivez…
