Voilà encore une autre recette de gâteau au chocolat?? Oui et non, car celui-ci est pour moi réellement incroyable par sa texture! Une fine croûte qui laisse un coeur fondant comme jamais!! Mais ce fondant a une petite histoire… En mettant l’autre jour la recette du fondant chocolat amandes, une internaute m’a laissé un commentaire me demandant si je connaissais le « Fondant Baulois ». Je me suis précipité pour savoir ce qu’est cette merveille. Je ne l’ai pas encore goûté, mais je me suis mis à imaginer un procédé pour obtenir une telle consistance. Ceci n’est pas le clone du Baulois, mais une recette que j’ai mise au point dans ma tête alors que je faisais une sieste…! Je me suis dit qu’en mettant telle quantité pour tel ingrédient et telle autre pour un autre ingrédient, j’allais peut être obtenir un moelleux jamais égalé. Ce gâteau est donc d’abord une expérience de pensée…! J’ai fait le test et le gâteau est sorti du four… Et là: miracle!! Il est allé au delà de mes espérances…! Le procédé est un petit peu tordu et la cuisson longue (presque une heure) mais on obtient un gâteau sublime et meurtrier. Le secret de mon gâteau? Au lieu de mettre du simple sucre, j’en fais un caramel dans lequel j’ajoute le beurre salé…
Mélanger les oeufs et la farine au fouet pendant 5 minutes pour aérer.
Mettre le sucre dans une casserole avec assez d’eau pour l’imbiber (en gros 50g d’eau).
Faire un caramel bien ambré (pas brûlé!!), puis ajouter le beurre hors du feu.
Cela va crépiter puis rapidement se calmer car le beurre refroidit le tout. Bien mélanger pour incorporer autant que possible le beurre et le caramel.
Tout en battant sur basse vitesse, ajouter le caramel sans attendre en le versant en filet. Il faut verser le caramel chaud sur le mélange oeufs-farine pour éviter qu’il ne durcisse. À chaque cela marche très bien, il n’y a là aucune difficulté.
On obtient une pâte très joliment colorée.
Faire fondre le chocolat au bain-marie ou au micro-ondes, puis le verser dans la pâte.
Bien homogénéiser le tout.
La pâte a une couleur presque rouge (bon le flash y est pour quelque chose aussi!!). Je conseille de tremper à ce stade le doigt et de goûter la pâte….
Préparer un moule à fond amovible de 15cm de diamètre, en le chemisant de papier sulfurisé sur le pourtour et le fond.
Verser la pâte.
Cuire 50 minutes à 145°C. Le gâteau remplit presque le moule car il gonfle beaucoup.
En refroidissant, il va reprendre sa taille d’origine. Laisser refroidir à température ambiante, puis stocker au frais pendant une nuit avant de démouler.
Enlever la paroi du moule, puis enlever le papier autour et en dessous.
Découper de fines parts, car ce gâteau est assassin… Un dernier truc: sortir le gâteau du réfrigérateur au moins 20 minutes avant d’y succomber.
