Voilà une recette extra-simple et qui reflète parfaitement le printemps avec ces délicieuses asperges vertes légèrement croquantes!!L’intérêt de la recette réside surtout dans la sauce mousseline à la ciboulette.
Couper les asperges à 6 ou 7 cm de leur base. Bien les laver.
Et les cuire à la vapeur pendant 12 minutes. Je les préfère encore vertes et légérement fermes. Si l’on préfère des asperges plus cuite, poursuivre de 5 minutes la cuisson.Conseil de Bernard: pour conserver la couleur et le croquant des asperges, il faut arrêter leur cuisson en les plongeant dans de l’eau glaçée (un bol d’eau froide avec quelques glaçons dedans).
Pendant ce temps, préparer la mousseline aux herbes. Séparer le jaune du blanc. C’est en fait simplement une mannoyaise avec le blanc en neige. Mettre le jaune, la moutarde, le sel et le poivre dans un bol.Conseil de Bernard: La maoynnaise ne ratera pas si les ingrédients sont à température ambiante! De toute façon les oeufs ne se conservent normalement pas au réfrigérateur. Sinon laisser le jaune et la moutarde reposer dans le bol jusqu’à la température ambiante!
Ajouter l’huile en filet tout en mélangeant au batteur électrique. Ou au fouet manuel avec beaucoup d’huile de coude! Il faut verser les 100g d’huile (je dis 100g car j’ai fait au « pif » en pensant avant et après pour cette recette et j’avais utilisé 100g!) par petites quantités. Si l’on est pas familier avec la mayonnaise, il faut juste attendre que la sauce prenne une apparence mat et non brillante avant de rajouter la suite de l’huile!
Dans un autre bol, battre le blanc en neige ferme. L’ajouter à la mayonnaise et mélanger délicatement en soulevant la sauce, exactement comme pour une mousse!
Ajouter la ciboulette finement ciselée.
Bien mélanger et réserver au frais jusqu’au moment de servir.
Plonger une asperge encore tiède dans la sauce! Le printemps est là!
