Voici une recette marocaine de la région d’Agadir. C’est une petite merveille de simplicité et de goût. Il s’agit d’une pâte lisse aux amandes broyées avec de l’huile d’argane et légèrement sucrée au miel. Elle se fait traditionnellement avec une pierre qui broie les amandes très finement. Avec un mixeur, on arrive presque à la même texture. Cela ne sera pas aussi fin (le broyage à la pierre donne un amlou incomparable) mais le résultat est absolument délicieux. Un peu de amlou le matin sur du pain et on tient sans problème jusqu’au déjeuner. L’huile d’argane donne un velouté en bouche très doux et la touche de miel est là pour sucrer le tout.
Mettez les amandes à torréfier au four à 190°C. Placez-les sur une plaque à pâtisserie garnie de papier sulfurisé.
Faites-les griller 15 à 20 minutes en surveillant. Je les aime bien grillées, mais vous pouvez les torréfier à votre goût.
Voici l’huile d’argane et le miel.
J’ai acheté ces deux produits chez Apia à Rabat au 44, rue de l’Oukaïmeden. Une boutique bio formidable avec un large choix de miel et d’huiles. Il faut prendre l’huile d’argane alimentaire et ne pas se tromper avec celle réservée aux soins cosmétiques.
J’ai aussi pris du miel d’eucalyptus, un des moins chers, car il convient tout à fait pour la confection du amlou.
Une fois les amandes torréfiées, laissez-les refroidir à température ambiante. Puis placez-les dans le bol de votre mixeur. Normalement cela se fait avec une pierre, mais à la maison cela n’est pas toujours très pratique !!
Commencez à les broyer puis ajoutez l’huile.
Poursuivez le broyage en ajoutant l’huile au fur et à mesure.
Très rapidement, le amlou se forme et devient presque liquide.
Ajoutez alors le miel. Vous pouvez en ajouter plus ou moins. En général, je préfère le amlou pas trop sucré.
Un dernier coup de mixeur et c’est prêt !! Vous pouvez le verser dans un beau plat pour le servir ou le conserver dans un pot à confiture. Si au bout de plusieurs jours l’huile remonte, il vous suffira de mélanger pour retrouver un amlou homogène.
