Le mieux est de faire tremper les raisins secs la veille. Placez-les dans un bol.
Versez l’eau chaude et le rhum sur les raisins. Laissez gonfler toute la nuit. Le lendemain ils ont doublé de volume.
Pour la semoule : placez le sucre, le lait et la gousse de vanille vidée de sa vanilline (que vous ajoutez évidemment dans le lait) dans une casserole.
Faites chauffer sur feu modéré. Pour la semoule, il s’agit de semoule fine de blé dur, pas celle pour le couscous grain fin !
Quand le lait frémit, versez la semoule tout en mélangeant.
Laissez cuire 5 minutes sur feu doux. Le tout va épaissir un peu (la semoule au lait épaissit aussi en refroidissant).
Versez dans un récipient puis couvrez tout de suite étirable pour éviter la formation d’une peau. Laissez tiédir puis placez au frais au moins 3-4 heures.
Égouttez-bien les raisins puis coupez-les grossièrement au couteau.
Enlevez le film étirable, et mélangez bien la semoule pour la détendre.Versez les raisins dans la semoule avec le lait pour détendre davantage la texture. Je fais toujours cela pour obtenir la texture que je souhaite, bien crémeuse. Vous pouvez en mettre plus ou moins, mais je trouve bien meilleur le résultat quand on ajoute encore du lait.
Vous pouvez ensuite garder au frais jusqu’au moment de servir.
