Pour les croûtons :Préparez tout d’abord les croûtons qui seront cent fois meilleurs que ceux du commerce ! Pas besoin spécifiquement de pain rassis. Du pain frais fera très bien l’affaire. j’ai pris pour cela 3 tranches de pain de campagne.
Coupez le pain en petits cubes. Versez dans un récipient, ajoutez les deux gousses d’ail pressées au presse-ail, salez et poivrez, puis arrosez généreusement d’huile d’olive. Commencez par 4 cuillerées à soupe.
Mélangez bien puis versez dans un plat allant au four. Si vous estimez qu’il y a besoin de plus d’huile d’olive, versez-en davantage.
Enfournez à 180°C pour 35 à 40 minutes. Les croûtons doivent être dorés et très croustillants !
Pour la sauce :Placez le jaune d’œuf, la moutarde, le jus de citron, les filets d’anchois, l’ail et la sauce Worcestershire dans un récipient prévu pour les mixeurs plongeant. Le mixeur plongeant va vous aider grandement pour la réalisation de la sauce. Mais sans c’est tout à fait possible également. Il faudra mettre tous ces premiers ingrédients dans un petit mixeur pour avoir une consistance homogène. Pour rappel la sauce worcestershire se trouve aujourd’hui dans toutes les grandes surfaces.
Avec le mixeur plongeant, mixez donc bien la base avec les ingrédients de départ (ou au mixeur).
Mixeur plongeant : Versez ensuite l’huile d’olive progressivement tout en continuant de mixer avec le mixeur plongeant pour avoir une consistance de mayonnaise.Sans mixeur plongeant : versez la crème mixée (grâce à votre petit mixeur) dans un bol, puis fouettez en ajoutant l’huile d’olive progressivement, comme un mayonnaise classique.Une fois cela fait, ajoutez le parmesan et la crème liquide et mélangez bien. Salez et poivrez à votre goût.
Faites cuire les blancs de poulet à la poêle pour bien les griller.
Rincez la salade romaine, puis coupez-la en deux, puis en quatre dans la longueur. Coupez ensuite la salade en morceaux.
Versez dans un grand saladier, versez la quantité souhaitée de sauce César. Ne mettez pas tout dès le départ.
Ajoutez des croûtons, du parmesan en copeaux, des quartiers d’œuf dur et le poulet grillé. Mélangez bien puis servez sans attendre.
