Dans un récipient, cassez 5 œufs et pesez-les.Dans un autre récipient, pesez le même poids en beurre demi-sel fondu. Versez le sucre roux et mélangez bien.
Ajoutez cette fois les œufs.
Versez le même poids en farine, mais la moitié en poudre d’amande (si 250g d’œuf/sucre etc, alors mettez 125g de poudre d’amande).Versez également l’arôme amande amère et la levure chimique.
Versez la pâte dans un moule à cake chemisé de papier sulfurisé.
Mettez une bande fine de beurre au centre de la pâte, cela ouvrira le gâteau pour la levée pendant la cuisson. Parsemez ensuite chaque côté d’amandes effilées.
Faites cuire 1h15 à 155°C sur chaleur tournante.
Laissez refroidir le cake à température ambiante. Je l’emballe ensuite dans du film étirable et je le mets au frais une nuit. Il se conservera ensuite à température ambiante dans une boite hermétique.
