De délicieux sablés au cacao et chocolat, généreusement garnis d'amandes grillées et de pépites de chocolat, voici la recette que je vous donne ! Il conviendra de torréfier les amandes en amont, pour révéler leur riche saveur. Ces petits gâteaux croustillants seront parfaits pour se réconforter à l'approche de l'hiver !
Pour cette recette, prenez des amandes blanches que vous ferez torréfier au four 20 minutes à 170°C.
Elles doivent être joliment grillées.
Placez le sucre glace, 100g de beurre demi-sel et le cacao en poudre dans la cuve de votre robot et mélangez à l’aide de la feuille jusqu’à avoir une consistance homogène.
Mettez à fondre ensemble les 35g de beurre restant et le chocolat noir.
Versez dans la cuve et mélangez de nouveau.
Versez alors la farine, les amandes grillées et les pépites de chocolat noir.
Mélangez de nouveau jusqu’à avoir une pâte homogène.
Regroupez la pâte sur le plan de travail et roulez-la en un ou deux boudins.
Emballez la pâte dans du film étirable, puis mettez au frais au moins 2 heures.
Coupez des tranches d’environ 1cm d’épaisseur ou un peu moins avec un bon couteau.
Placez les sablés sur une plaque à pâtisserie garnie de papier sulfurisé.
Faites cuire 25 minutes dans un four préchauffé à 175°C.
Ils se conserveront longtemps dans une boite parfaitement hermétique.
