Chocolat pour tremper

Instructions
 

  • Faites préchauffer le four à 170°C sur chaleur tournante, puis faites griller les amandes 20 minutes.
  • Pendant ce temps, mélangez le beurre demi-sel, le sucre et le zeste de l’orange bio.
  • Mélangez avec la feuille ou du bout des doigts sans machine.
  • Mettez les amandes grillées et les canneberges dans un petit mixeur et mixez grossièrement.
  • Ajoutez les farines (T55 et T80) et les flocons d’avoine dans le récipient du beurre.
  • Versez le mélange amandes/canneberges puis mélangez jusqu’à avoir une pâte homogène assez ferme.
  • Mettez la pâte sur un papier sulfurisé puis étalez à 5mm d’épaisseur.
  • Coupez des sablés avec un emporte pièce. Vous pouvez réunir la pâte restante pour refaire des sablés.
  • Mettez les sablés au fur et à mesure sur une plaque garnie de papier sulfurisé.
  • Faites cuire dans le four, cette fois à 165°C pendant 22 minutes en adaptant la cuisson à votre four.
  • Ils doivent être bien dorés.
  • Vous pouvez arrêter là ou continuer la recette avec le chocolat blanc. Il faudra le tempérer comme indiqué ICI.
  • Trempez chaque sablé à moitié dans le chocolat tempéré, puis mettez un morceau de canneberge si vous avez envie.
  • Ils se conserveront plusieurs jours dans une boite hermétique, le croustillant sera préservé !
