Une recette parfaite pour la saison. De délicieux raviolis "maison", que vous pourrez cuire avec la sauce de votre choix. Je me suis régalé, c'était une merveille à dévorer ! C'est un peu de travail, mais qui vaut largement la peine quand c'est le moment de passer à table. À faire pour un repas qui restera mémorable !
Épluchez et l’échalote et les gousses d’ail. Coupez en petits morceaux.
Placez le beurre et l’huile d’olive dans une poêle et faites chauffer sur feu doux.
Placez l’ail et l’échalote et laissez cuire en remuant de temps en temps, pendant 5 minutes.
Ajoutez les girolles et les cèpes nettoyés. Pour ne rien vous cacher, j’ai pris ici des champignons congelés qui sont parfaits pour la recette. Mais prenez des frais dans la mesure du possible !
Laissez cuire 10 minutes, puis versez le vin blanc et ajoutez la ciboulette et le persil, le tout bien ciselé.
Laissez ensuite cuire en remuant jusqu’à ce que tout le liquide soit évaporé.
Laissez refroidir totalement puis versez le contenu de votre poêle sur une planche à découper. Hachez grossièrement au couteau.
Reversez dans un récipient, puis ajoutez la ricotta et le parmesan râpé.
Mélangez soigneusement. Salez et poivrez à votre goût.
Coupez les noix de pécan au couteau et versez-les dans le récipient. Un dernier mélange et c’est terminé.
Pour la pâte aux œufs, je fais toujours ma recette qui est ICI !
Prenez la moitié de pâte, roulez-la en boudin puis aplatissez-la avec la main avant de la passer au laminoir.
Farinez la pâte avant de la passer au laminoir, d’abord à l’épaisseur la plus large, puis jusqu’à l’épaisseur qui vous semble la plus judicieuse.
Pour ma part, je la passe jusqu’au numero 3 du laminoir Kitchenaid, qui doit être identique sur l’Imperia.
Je me suis acheté quelques jolis moules à raviolis en bois.
Farinez le moule avec une petit pinceau. Coupez un carré de pâte, mettez une bonne quantité de farce aux champignons. Passez un peu d’eau (sans excès) autour de la farce. Vous pouvez évidemment réaliser ces raviolis sans le moule en bois ! Posez un deuxième carré de pâte.
Je passe un petit coup de rouleau sans presser trop fort.
Démoulez le ravioli puis coupez l’excèdent au besoin. J’ai pris un emporte-pièce cannelé.
Pour la suite, c’est libre à vous pour la sauce. Je les ai faits cuire 5-7 minutes à l’eau bouillante salée (tout dépend de l’état de « séchage » de votre pâte). Vous pouvez faire une sauce à base de crème et de parmesan, c’est un délice !
