Dans un récipient, placez le sucre (blanc ou complet de canne), la farine de riz (complet ou non), la levure chimique, le sel et la gomme pour pain sans gluten.
Mélangez au fouet puis versez l’huile, l’œuf et la vanille. Pour avoir la bonne quantité d’œuf, cassez deux gros œufs dans un bol, battez-les à la fourchette et pesez-en la quantité nécessaire. Vous remarquerez que les quantités sont légèrement différentes dans les deux recettes. C’est simplement qu’il m’a fallu adapter car la farine de riz classique et la complète ne réagissent pas de la même façon. Ajoutez pour les madeleines au chocolat, les pépites et les graines de chia. Mélangez au fouet pour avoir une pâte lisse.
Laissez reposer la pâte au frais pendant 2 heures.
Préchauffez ensuite votre four à 175°C. Versez la pâte dans vos moules à madeleines. J’ai essayé tous les moules à madeleines existants. Ceux en métal vont nécessiter d’être graissés. Je préfère et de loin, les moules professionnels en silicone noir, que vous trouverez dans le commerce, même pour les particuliers. Sans aucune matière grasse, les madeleines seront parfaites. Il ne faut pas trop remplir les moules, car la pâte risque de déborder. Il faut faire un premier essai avec vos propres moules.
Suivant leur taille, faites cuire 12 à 18 minutes. Les madeleines vont gonfler et se colorer. Adaptez la cuisson à votre four et à la taille de vos madeleines. Laissez tiédir et démoulez. Vous pourrez les conserver en boite hermétique.
