Un cheesecake au bout goût de pistaches grillées, avec une touche de chocolat blanc pour une texture onctueuse à souhait ! Le tout sur une base sablée aux pistaches. Si vous aimez ce petit fruit sec, ce cheesecake est fait pour vous ! Je vous conseille de le préparer la veille, afin qu'il passe la nuit au frais.
Tout d’abord, mettez à griller 16 à 18 minutes à 170°C, les pistaches crues, non salées. Au total, il en fat 275g, mais je vous conseille de mettre à griller 290g !
Préparez la base sablée :Mettez les biscuits digestives et les pistaches grillées dans un petit mixeur et réduisez en poudre assez fine.
Faites fondre le beurre, versez-le dans un petit récipient avec la poudre obtenue et le sucre.
Mélangez bien.
Versez dans le moule (je vous recommande un moule à fond amovible), chemisé de papier sulfurisé. Je coupe un cercle de papier à la taille du fond et une bande pour le pourtour interne.
Répartissez la pâte de façon homogène en tassant bien avec une cuillère à soupe.
Mettez à cuire à 170°C pendant 12 minutes.
Préparez la crème :Pour cela, mettez les pistaches grillées, le lait, l’huile et la crème tiédie (si elle est froide, elle va monter en chantilly !) dans un blender.
Mixez bien jusqu’à avoir une pâte homogène. Pour information, j’ai laissé la peau des pistaches.
Si vous avez du chocolat blanc en pistoles, mettez-le également dans le blender. Avec la chaleur du broyage, il va fondre très vite. Si vous avez du chocolat blanc en tablette, mettez-le à fondre et ajoutez-le dans l’étape suivante.
Mettez à fondre au four à micro-ondes le cream cheese. Ajoutez le sucre (le chocolat blanc fondu si vous ne l’avez pas mis avant) et mélangez bien.
Versez la crème pistache du blender et les œufs puis mélangez soigneusement. La pâte doit être lisse et soyeuse. Versez dans le moule.
Mettez à cuire 45 minutes à 190°C sur chaleur statique (non chaleur tournante). Le gâteau doit se colorer très légèrement et trembloter un peu au centre. Laissez-le refroidir à température ambiante, puis placez-le au frais pour une nuit. Le lendemain, démoulez-le et retirez le papier sulfurisé.
