Com o Verão aqui, é a época alta para a ameixa mirabelle. Raramente faço bolos de fruta, uma vez que sou uma aberração da fruta na carne. O que poderia ser mais delicioso do que um sumarento pêssego branco com a pele e o caroço facilmente removidos? Ou um melão doce… Mas claro, também se pode fazer morangos, tartes de morango, sorvetes e muitas outras iguarias. Da qual a torta de ameixa mirabelle é uma! Apresento-vos a minha versão dos factos, com um creme de amêndoa, não demasiado doce, que é suficientemente discreto para realçar o sabor das mirabelles…
Receita para uma torta de ameixa mirabelle para 6 pessoas: (um círculo de 18cm por 2,5cm de altura)
Massa doce (suficiente para 2 tortas):
-210g de farinha
-125g de manteiga mole fria
-35g de açúcar de confeiteiro
-25g de pó de amêndoa
-50g de ovo batido
-vanila em pó
-600g de ameixas mirabelle
Creme: -75g de pó de amêndoa -100g de creme -2 ovos -60g de açúcar de confeiteiro -30g de manteiga derretida -1 colher de sopa de aguardente de ameixa Mirabelle
Preparar a massa doce. Colocar todos os ingredientes excepto o ovo numa tigela ou na tigela de um processador de alimentos.
Bater com a folha do processador de alimentos (este é o K) até que a manteiga seja incorporada.
Nesta altura, adicionar o ovo previamente batido.
Ligue novamente só para incorporar o ovo batido, mas não mais!
Colocar metade da massa sobre papel vegetal. Ponha o resto em película aderente no congelador para outra tarte!
Colocar outra folha em cima da massa e enrolar com um rolo de massa até uma espessura de cerca de 2-3mm. Desta forma, não é adicionada farinha extra e a superfície de trabalho e o rolo permanecem limpos.
Colocar um anel de cozedura (18X2,5cm) sobre uma folha de cozedura forrada com papel vegetal. Tenha cuidado para fazer um ângulo recto no canto do círculo com a placa.
Cortar o excesso de massa com uma faca do interior do círculo para o exterior num curto movimento.
Dar a volta ao círculo novamente, beliscando e dobrando a massa para obter um ângulo perfeito.
Desta forma o círculo é perfeitamente escuro (cheio de massa).
Lavar as mirabelles, remover os caules e cortá-los ao meio.
Remover as fossas e colocar as ameixas mirabelle bem na base de pastelaria.
Preparar as natas misturando os ovos, manteiga derretida, açúcar de confeiteiro, natas e amêndoas em pó. Pode adicionar uma colher de sopa de aguardente de ameixa Mirabelle!
Misture rapidamente. Isto é feito numa questão de segundos.
Verter este creme para a base de pastelaria onde se encontram as mirabelles.
Cozer a 180°C durante cerca de 40 minutos. A melhor coisa a fazer é dar uma vista de olhos de vez em quando. As mirabelles libertam sumo que carameliza bastante fortemente, mas este é removido após a cozedura. A tarte deve ser castanha dourada.
Cortar cuidadosamente e colocar a tarte sobre uma grade de arame para arrefecer.
