Uma entrada fresca e leve ! Uma receita rápida e fácil. Uma óptima maneira de começar uma refeição e terminá-la com uma nota doce sem um estômago pesado!
Receita para 4 pessoas:
-600g de salmão fresco cru sem pele
-2 colheres de sopa de azeite de oliva
-1 colher de sopa de molho de soja
metade de um shallot
-ciboulette
-Basil
-o sumo de meia lima
-Ovos de salmão (opcional!)
-sal, pimenta
Limpar bem o poço do salmão, verificar se há paragens.
Corte-o em fatias finas, depois em pedaços pequenos, mas definitivamente não num liquidificador!
Colocá-lo numa tigela, adicionar o azeite e o molho de soja.
Adicionar o sumo de lima, sal e pimenta.
Cortar a metade não deve ser finamente cortada.
Cortar o cebolinho e as folhas de manjericão. Colocar o equivalente a duas colheres de sopa de cada.
Acrescentar tudo ao salmão. Misturar bem e arrefecer durante pelo menos três horas.
Coloque um círculo de sobremesa de 8cm num prato, coloque o tártaro em cima e pressione-o para baixo com a parte de trás de uma colher.
Saia do molde e coloque os ovos de salmão por cima. Servir imediatamente! Decorar como desejado (o que não fiz na foto!) com caules de cebolinho e/ou folhas de manjericão.
Tartare de Saumon

Une entrée fraîche et légère! Une recette simple et rapide. Pour commencer un repas en beauté avant de le terminer sur des notes sucrées sans avoir l’estomac alourdi!
Bien nettoyer le saumon, vérifier l’absence d’arêtes.
Le détailler en tranches fines, puis en petits morceaux, mais surtout pas au mixer!
Le mettre dans un bol, ajouter l’huile d’olive, la sauce de soja.
Ajouter le jus de citron vert, saler et poivrer.
Hacher menu la demi échalote.
Ciseler la ciboulette et les feuilles de basilic. En mettre l’équivalent de deux cuillerées à soupe de chaque.
Tout ajouter au saumon. Bien mélanger et mettre au frais pour au moins trois heures.
Dans une assiette, poser un cercle à entremet (ou à tarte) de 8cm, y déposer le tartare et le presser avec le dos d’une cuiller.
Démouler et déposer sur le dessus des oeufs de saumon. Servir immédiatement! Décorer à l’envie ( ce que je n’ai pas fait sur la photo!) avec des tiges de ciboulette ou/et des feuilles de basilic.
