Como um pouco de desejo de frescura? Então esta entrada será perfeita para si. Uma sopa fria de ervilhas e menta. É muito simples, mas claro que deve ser preparado com antecedência, no dia anterior para o dia seguinte ou mesmo de manhã para a noite, para que possa ser misturado no último minuto com a hortelã para que não cozinhe e deixe espaço para o seu sabor fabuloso. Uma entrada saudável e deliciosa para fazer de novo e de novo!
Receita de sopa fria para 4 pessoas:
3 colheres de sopa de azeite de oliva
1 cebola
1 pequena courgette
400g ervilhas
800ml de água
sal, pimenta branca
4-5 ramos de menta fresca
sal, pimenta branca
Para esta sopa fria, procure bons legumes frescos, especialmente para as ervilhas e a hortelã!
Colocar o azeite numa panela em lume médio com a cebola picada e a curgete. Ferva em lume brando durante 5 minutos.
Boas ervilhas frescas!
Colocá-los na frigideira.
Misturar, adicionar sal e pimenta.
Verter na água fria.
Ferver durante 12 minutos. Os legumes não serão necessariamente cozinhados completamente, mas continuarão a cozinhar na água quente enquanto arrefecem.
Deixar arrefecer completamente até à temperatura ambiente e depois arrefecer antes de continuar. Pode fazê-lo na véspera para a manhã, à noite.
Quando a sopa estiver fria, misturá-la com uma varinha mágica.
Acrescentar as folhas de hortelã dos 4 ramos. Claro, pode acrescentar mais ao seu gosto!
