Uma nova tarte de morango com uma nova técnica de pastelaria. Eu tinha visto uma tarte semelhante no Yann Couvreur's, mas não tive tempo de a experimentar. Pensei em como fazer a minha própria versão com um creme de manjericão e creme de amêndoa de limão e o resultado foi além das minhas expectativas. Especialmente com os morangos da época, que são sublimes neste momento! Para a técnica, é utilizado um tecido arejado para o fundo e lado do círculo, o que evita o inchaço da massa. Isto significa que pode ser cozido sem ervilhas ou uma técnica de saco de farinha. Isto também dá à tarte um bom padrão.
